Stirred With Love

Mary Kay Ash was as comfortable in her cozy kitchen as she was in the corporate boardroom. She was an avid cookbook collector and enjoyed a lifelong passion for exchanging great recipes.

As we enter into fall, there's something comforting about warm banana bread. We hope you enjoy this recipe, which was originally published in 2002 in the book, And Stirred With Love, a collection of recipes from the Mary Kay family. Banana Muffins

Ingredients:

3 large ripe bananas

1 cup sugar

1 egg

1/4 cup vegetable oil

1/2 cup applesauce

2 cups all-purpose flour

2 teaspoons baking soda

3 tablespoons low-fat buttermilk

2 teaspoons vanilla extract

Directions:

  1. Preheat oven to 350°

  2. Lightly spray muffin pans with vegetable spray.

  3. In a large mixing bowl, mix the bananas, sugar, egg, oil and applesauce.

  4. Then, add flour and baking soda. Mix until blended.

  5. Add buttermilk and vanilla. Blend again, but do not over mix.

  6. Using an ice cream scoop to measure, drop the mixture into the muffin pans, filling two-thirds full.

  7. Bake for 25-30 minutes or until toothpick comes out clean.

These make a great breakfast or after-school snack. May be frozen after cooling.
